A delicacy once reserved for Chinese emperors, shark fin has been cherished for centuries as a nourishing and luxurious dish. Rich in natural collagen—an excellent source of protein—it is believed to revitalize the body and boost energy. Though shark fin itself has no flavor, its taste is elevated through careful pairing with premium ingredients such as aged hen and top-quality Jinhua ham, both of which are rich in protein and umami.
At Really Good Seafood, we use the prized Jinshan Hook Shark Fin (known in Cantonese as "Gau Yu Chi"). The fins undergo a meticulous process of simmering, steaming, soaking, and individual cleansing over a 12-hour period using traditional bamboo steamers. The broth is slowly simmered for 10 to 12 hours using aged hens and Jinhua ham, resulting in a silky, flavorful soup that perfectly blends the ocean essence of shark fin with rich, savory depth.
